Pumpkin Chocolate Chip Cookies

The husband decided that since Starbucks has busted out the Pumpkin Spice Latte it was time to start making Pumpkin Chocolate Chip Cookies!! These are his absolute favorite cookies, and he annoys the crap out of me until I make them. I thought for sure I had a couple more months before I would have to start this kitchen ritual...but thanks to Starbucks and it's slightly off calendar this year I made the first of many batches. 

If you are feeling brave, and your waistline will forgive you try these out! Or wait until a reasonable time to make them like...November. 


1 cup canned pumpkin pie filling
1 egg
1/2 cup vegetable oil 
1 cup white sugar
2 cups flour
2 tsp baking powder
1 1/2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1 1/2 TB vanilla extract
2 cups chocolate chips


Preheat oven to 350

Combine pumpkin, sugar, oil, vanilla, and egg in a large bowl. In a separate bowl, stir together flour, baking powder, cinnamon, baking soda, and salt. Add flour mixture to pumpkin mixture and mix well. Stirring for about one minute. Add chocolate chips until combined well.

Line a baking sheet with parchment paper. Drop cookies on by the spoonfuls. Bake for 8-10 minutes. 

*My kids and I like to add powdered sugar to the tops, but the husbands prefers them without.
