soup in the summer

Who is eating warm soup in the summer time? This family, thats who! The weather has just been gloomy, rainy, and when the wind kicks up, down right chilly. Chris came back from the field with a cold or something and promptly asked if I would make chicken soup. Sure, why not? This recipe makes more than enough for us to have yummy leftovers, and the kids love it. Winner winner chicken dinner! 

Ingredients:
  • 3-4 chicken breasts
  • 1 large onion
  • 4 large carrots
  • Parsely, fresh or dried 
  • 2 tablespoons unsalted butter
  • 2 tablespoons flour
  • 2-3 russet potatoes 
  • 1/2 cup heavy cream
  • 1-2 tablespoons dill, fresh or dried
  • salt and pepper


Step 1
Homemade chicken broth. Place chicken breasts in a large stock pot and add enough water to cover about one inch over the chicken. Add half the onion no need to chop. Add two carrots cut in half. Add in a palm full of parsley, and lots of pepper. Bring to a boil, then partially cover. Reduce heat and simmer for an hour. Then remove chicken to cool. Strain the broth into a smaller pot and cook for 20 minutes to reduce. Once chicken is cool enough to handle, shred!
Step 2
Melt butter in stock pot you used to make the broth. Add the remaining carrots and onion chopped. Cook for about 5 minutes. Stir in flour, and cook for another minute. Whisk in your chicken broth and bring to a boil. Add in potatoes and salt. Reduce heat and simmer until potatoes are fork tender. About 6-8 minutes. 
Step 3
Stir in shredded chicken and heavy cream. Heat through until warmed. Season with dill. Add more salt and pepper to your liking. We like to top ours with parmesan cheese, and a side of crusty bread for dipping! 

This is a great recipe to make on the weekends, and in my opinion it tastes way better as the days go on. This is definitely a family favorite, I hope it becomes a favorite of yours too!

    Yesterday was a cold (c o l d !) day here, so random!! I guess we were even supposed to get 6 inches of snow in the mountains... so this would have been the perfect dinner for us! (I mistakenly made chicken salad sandwiches... I was expecting a hot, summer day!) Saving this one for sure!

  5. Mmm .. I was craving a good tomato soup the other day. Yes, it's 150 million degrees outside but I still wanted soup.
