With the kids being one notch down from their normal crazy, thanks to the second round of runny noses and all night coughing, I have been somewhat run down this week and at a loss for too many meal ideas. I have made two different chicken soups this week, and decided to branch out from one feathered friend to another. The turkey! I found this recipe from the all mighty domestic goddess Martha, not to be confused with Gwyneth and Blake as they throw their hat in the ring of creativity. According to my tabloid sources (the internet) Martha won't be going down without a few insults here or there. WHAT THE HELL AM I TALKING ABOUT? Please excuse my celebrity gossip brain. This recipe. You see I changed it a bit to fit my family's taste buds, and it is amazing! I am so happy it makes so much because we have all been consuming bowl after bowl. Oh and it is a one pot wonder, less to clean up!


2 tablespoons extra virgin olive oil
1 medium onion, chopped
1 pound ground turkey
2/3 cup quinoa
1 teaspoon red pepper flakes
salt and pepper
3 teaspoons smoked paprika
1 (28 ounce) can diced tomatoes
1 tablespoon oregano
1/2 tablespoon garlic powder
2 1/2 cups water
2 cans cannellini beans, drained and rinsed
1 bag fresh baby spinach
2/3 cup feta cheese, then more to top it off


1. Heat olive oil in dutch oven, or large stock pot. Add in onion, turkey, quinoa, red pepper flakes, and salt and pepper. Cook, stirring and breaking up turkey until browned, 5 minutes. Add paprika and cook for another minute. Then add tomatoes, water, garlic powder and oregano. Bring to a simmer, cover and let cook for 25 minutes, stirring occasionally.

2.  Stir in beans, feta, and spinach. Cook until feta is almost completely melted, about 2 minutes. Then serve it up, and sprinkle a little more feta on top!
